After the video of Apache Roadhouse was released last week, Ch. 8 news in Dallas decided to run a story on me and Mark. Since I happened to be coming in town this week, we were able to set up the interview yesterday at my parents house. I had never been on TV before, so naturally I was a little nervous...not knowing what they were going to ask or what I should say. I just said what I felt...They were here for about an hour and got a lot of footage, so it was interesting what they chose to air. I think they did a great job on the story! I can't figure out how to post the actual video on here, so here is the link to it on WFAA's website.

I'm writing from the Seattle airport because I am waiting for my flight to "God's Country" aka Texas. One last hoo-rah before the soldier man comes home. It is going to be a trip packed with fun...as usual. The highlights will include High School State Baseball Playoffs...graduation parties...prom sendoff...and graduation! Also, I'm hoping to find my ball gown for the BN ball, because I have searched high and low in my neck of the woods and have found NOTHING! I think the Nordstrom by me had about 8 dresses total, and none of them were keepers.
In other news...check out this awesome video of my soldier man and his company in Iraq! Craziness!!!!!
He would never brag...but I can and I think he is amazing! Now, I'm ready for him to come on home. I think he has done enough over there. Speaking of coming home...let's just say I am not going to get my 100 workout stars in. He is coming home that soon....like in the coming weeks!!!!!!!!!

This has been a record breaking day! There were 6 maintenance men here working on the drain in my kitchen. In the history of the first plumber's career (20 years), he has never had so much difficulty unclogging. He arrived (the first plumber) at my house this morning at 10:22 and all 6 plumbers left at 4:22 PM. That is a whopping 6 hours to clean a kitchen sink drain! It is still a mystery what was clogging it...the first suspect was a clump of black hair! GROSS! First of all..I do not have black hair and second...if the person who lived here before me had black hair, why was it in the sink? The next thought was that it was a grease clog? 2 hours later...it was thought to be tree roots crossing the pipes? And then at last...the drain was unclogged miraculously, and I have now taken ownership back of my kitchen. Happy Friday!
I totally underestimated how difficult this cake was going to be. It is all chocolate with raspberry filling and all buttercream. I don't think the picture really depicts how big this cake is either. It is a little over 8 inches tall and it is very heavy! It doesn't look like much, but it was not easy to make this think look like a hat! I hope Ethan enjoys his cake and has a fun party!

I finally found THE dress. The dress for the return of my husband! He has been on "vacation" for the last 282 days, so it is imperative that I have the most amazing outfit ever! This has been quite the challenge, because I had nothing in mind and nothing was just jumping off the rack at me. A few weeks ago, I thought I found the dress...it was adorable. It was royal blue and white and had the cutest bubble hem and a semi-sweetheart neck line. I ordered it online and about a week later a rep from the company called to inform me that the dress had been discontinued and she had no idea how I was able to order it. I was sad! :( When I told Mark about it and how I had planned to wear my super cute red pumps with this blue/white striped dress, his only response was "Great! You would have looked like the Grand Ole Flag!" I guess I am glad it was discontinued. So, the search continued and I just got the new official dress yesterday in the mail, and it did not disappoint! It is cute! Now, i just need shoes and I should be good to go. I would post a picture of it, but every once in a while Mark checks my blog and I want to keep it a surprise. I'm sure you will all be waiting on pins and needles...don't worry, you don't have to wait too long! ;)

These cupcakes were so easy to make and they turned out YUM-O! The recipe made 24 full size cupcakes and 12 mini cupcakes. For the full size cupcakes I put half of the oreo in the bottom of the cupcake for the "surprise"! The cake is just a simple vanilla cake mix with an extra egg and a tsp. of vanilla added. Then a crushed up some oreos ( I didn't count...I just kept crushing until I thought it was enough) and folded them in to the cake batter. For the frosting, I used my regular buttercream and mixed it with the rest of my oreo crumbs. First I tried piping the icing on, but the tip kept getting clogged with chunks of cookie, so I found that spreading works much better and then stick half of a cookie on top. :) Happy Baking!

I made the trip down to Portland this past weekend to see my girls dance. It was lovely. The drive was good. No traffic and beautiful scenery. It felt like a flash back to my flight attendant days....traveling alone and staying in my own hotel room. The competition itself was a flashback to the stone age. I don't know what some of these studios were thinking??!! My girls did well and I was very proud of them!
I had hopes and dreams of these being delish! And...my dreams came true. They are scrumptious, but they are UGLY! I can not serve these to the people at my meeting. What should I do? Options:
1. Eat all of them and start over
2. Forget about them and go for a run
3. Throw them away
4. Find people to eat them that don't care how ugly they are
They really are yummy. They are strawberry with strawberry cream cheese icing. The cupcake itself turned out beautifully. They all rose evenly and looked nice and uniform. They icing is a tragedy! It is lumpy and runny. I continued to add more powdered sugar to thicken it up and that didn't work, so I popped it in the freezer...that didn't work either. So, I just thought i would pipe it on and toss them in the fridge and hope they turned out OK. Well, that didn't really work either. And what is with the chunks of cream cheese? I'm pretty sure it was nice and soft and I beat it for at least 2 minutes. I should have stuck to the plan...which was to make oreo cupcakes this week, but since I had left over strawberries I changed the plan. Next time I will stick with the PLAN!!!!
