1 Home...

Today, I had the pleasure of helping my friend, Molly, welcome her husband home from Iraq.  He was the XO of our company, but he got to come home a few months early to go to his next assignment.  I know that Mark misses him, but Molly sure was happy to see him!  It is always fun to greet a soldier, but extra special when your celebrating with a friend.



While we were waiting, I noticed there was a lady with a baby and they were also waiting for a soldier.  She didn't have a camera with her, so I offered to take a few pics and email them to her.  She had the happiest little baby with her and was so excited to see her husband!


Today got me so excited about our homecoming!!!  It is still a little ways away, but today definitely made it feel closer.  I feel like a little part of Mark came home today! :)

Once lost, but now found...

The mail key!  Someone must have been holding it hostage since the day I left it in the keyhole on my mailbox door, because miraculously it was sitting on top of the mailbox today with a new key chain attached.  A little odd, I must admit, but I am super happy to have my key back.  But, why?  Why did they keep it for so long?

And...I decided last minute to run the airfield race this morning.  I signed up last week, but decided I would only do it if it wasn't raining.  I didn't set my alarm this morning, because I fully anticipated rain.  I awoke to sun beaming through the window and assumed it was around 10AM and I had slept through the race.  Nope!  It was only 7AM.  So, I put on my running stuff and decided to go for it.  Of course, about 10 minutes before the race started the clouds opened up and it started to pour.  I really wanted to take my t-shirt, get back in the car and go home...but, I stayed, I ran, and I didn't melt.  I'm glad I did it!  I feel like I accomplished something today and burned a few calories in the process.  And, since I am meeting the girls at The Old Spaghetti Factory for dinner, I needed to burn those calories.  The best part is I shaved almost 5 minutes off my time from last year!  That is huge!  :)

Girls Beach Weekend

This weekend I went with some fellow Army wives on a little mini vacation to the WA coast.  Besides the weather being a bit dreary, it was a wonderful time.  We ate plenty of yummy treats, shopped in the little town, watched a movie, lots of girl talk, and a short walk on the beach. It was a great little getaway and fun to experience something new in WA...and I love these girls!!!!  Here are a few pics from our fun weekend!

Yes, I have Issues

I am not to proud to admit that I have a few issues, but come on...who doesn't?!  I think it all started when I was a small child really.  I collected balloons!  And when I say balloons, I mean ones that are not blown up.  I had quite the stash.  I also collected pencils that I would never sharpen, bouncy balls that I never played with and tons of stickers that I never stuck on anything.  Odd, I know!

Thankfully, I have outgrown all these strange little things, but my main issue now is mail.  I love it!  I love everything about it...I love checking the mail, opening the mail, reading the mail, and sorting the mail.  Maybe I have a future as a postal worker.  I think I inherited the "I heart mail" gene from my dad.  He has this same issue with checking the mail daily and it is no small emergency if someone blocks the mailbox and the mail can't be delivered.

So, yesterday, as I was getting ready to check the mail I realized the mail key is missing!  CRISIS!!!  I have turned the house upside down.  All I can figure is that I either left it in the mail box or it went in the trash with the junk mail.  Thank goodness we have a spare, but that isn't the point!  I hate losing things!!!!  And of all things...my beloved mail key!

A few of my faves!

I'm patiently waiting for the soldier boy to call, so I can head out for a run and do the other things I need to do today.  I don't want to run until I hear from him, because I don't want to chance missing his call.  So...I will wait.  And while I am waiting I am thinking of a few of my most favorite things as of now.  

First...I really try to avoid any type of diet coke, but I saw these cute little cokes at the commissary and I could not pass them up.  They jumped off the shelf and into my cart.  I have no idea how it happened, but they are quite enjoyable.


Second favorite thing...Mrs. Renfro's jalepeno salsa.  LOVE IT!  I love anything that lights my mouth on fire.  The hotter the better.  I didn't even realize that it is made in Fort Worth, TX until I went to use it for the first time.  That makes me like it even more!

My last favorite item of the moment...My new address stamp.  I got real tired of writing out my new address.  Yes, we still pay our bills with checks, therefore...I have to write the address many times.  So, I found this adorable stamp on Etsy and I am already loving it.  


And now...back to waiting!  Seriously, the roads are calling my name.  It is a gorgeous day!

Cookie Dough + Cupcakes = YUM!

I found this recipe on one of the many random cooking blogs that I read about a month ago and I have been dying to give it a try.  OH MY GOODNESS!  You must try these!!! It all starts with a brown sugar cupcake with chocolate chips, and egg free cookie dough for the filling, so no worries of some horrible food borne illness, and a delightful brown sugar icing topped with baby chips.  So, here is a photo or two for you to enjoy before you continue on to the recipe and my personal tips on this little morsel of greatness!
Recipe:
Cupcake:
3 sticks unsalted butter
1 1/2 C. light brown sugar
4 large eggs
2 2/3 C. flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 C. milk
2 tsp. vanilla
1 C. chocolate chips

Preheat oven to 350.  Bake for 18-20 minutes.  Recipe made 24 cupcakes.
Combine butter and brown sugar until light and fluffy.  Add eggs one at a time.  Combine all dry ingredients in a bowl on the side.  Alternate adding dry ingredients and milk, starting and ending with the dry ingredients.  Add vanilla.  Fold in chocolate chips.

Filling:
4 T. Butter
6 T. light brown sugar
1 C. + 2 T. flour
7 oz. sweetened condensed milk
1/2 tsp. vanilla
1/4 C. mini choc. chips

Combine butter and brown sugar until light and fluffy.  Add everything else except choc. chips and mix until it is smooth.  (About 3-4 minutes)  Fold in choc. chips.  Cover and chill for at least one hour.

Frosting:
3 sticks butter
3/4 C. light brown sugar
3 1/2 C. powdered sugar
1 C. flour
3/4 tsp. salt
3 T. milk
2 1/2 tsp. vanilla

Combine butter and brown sugar until light and fluffy.  Add the rest of the ingredients and mix for 3-5 minutes.

Once cupcakes come out of the oven, let them cool and then remove some of the cupcake from the middle.  Something like this:

I used that random tool to remove some of the cupcake.  I actually have no idea what the real purpose of that gadget might be.  Possible apple corer...not sure.  Anyway, after you get some of the cupcake out (take out more than you would think...I didn't get enough out, therefore, I didn't have room for much filling)

I then added the filling with a knife.  There might be a more efficient way to do this, but it worked OK.  Then, all that is left is to put the yummy frosting on top and garnish with a few tiny chips.  I just taste tested one and they are in fact A-MAZING!  Happy Baking!

This is the awesome tree that I have in my front yard.  Isn't it great?  I get to look out my kitchen window and see the beauty every day!  I love it...and I love Spring!

I saved $6...

Is it really worth it?  I spend all this time picking up the newspaper, clipping coupons, organizing coupons, making my shopping list accordingly, and most importantly remembering the coupons when I go to the store.  So...all this work and I get to the check out line only to have the crazy asian lady (I have nothing against asians, it just so happens that all of the ladies who check me out at the commissary happen to be crazy!) harass me over my coupons!  For real...she made me prove to her that I had purchased the items I had coupons for.  As in...dig through the sacks to find the items.  OK, I'm pretty sure that she has a computer screen to scroll through to see that I did in fact purchase the items in question.  And, although I have never been a checker, I would assume that if you scan the coupon and I didn't buy the product...it wouldn't accept it.  So, after all of this nonsense and holding up the line I finally pay and get out to my car only to realize that I have left my iPhone at the checkout!!!!  Sheesh!  So, I high tail it back in to the store and it is still nicely sitting where I left it...thank goodness!  Maybe next time I will just forget the coupons and forget the hassle.

Sunday Nights Just Got Better

Army Wives is back!!!  I love this show!  This weekend has been really great...it started with a "run to remember" with the 5th Brigade wives and then an amazing dinner at Dukes with a few of my dear Army wife friends (more on that momentarily), then today started with a trip to Michaels to pick up a few photo albums for 40% off, then this evening I had a lovely dinner with Molly and her precious mom who is visiting from California.  I kinda fell off the healthy diet wagon this weekend.  I did run yesterday, but today I didn't even make it to the gym.  I indulged on mexican food and ice cream and now I am settled on the couch watching my favorite show and blogging on commercials.  Good stuff!  Did I mention I love this show?

I think I have found my new favorite food!  I have always enjoyed Dukes on the waterfront...mainly for the scenery and the delicious chowder, but last night I branched out and tried the crab stuffed prawns.  Out of this world!  If you go there...you must try them... and get the large order!  I opted for the small, assuming that it would still be pretty big, but I could have definitely had a few more of these little guys.  Go there and order these!

Back to the subject of running...I ran the 4.3 mile airfield yesterday, which is the farthest (or is it furthest?) I have run since the 1/2 marathon in November.  My knee had been really sore and I just didn't want to push it, but yesterday felt good.  It felt really good!  I'm excited to get back into it and really enjoy my runs.  I'm still debating if I want to sign up for the airfield challenge again this year.  We'll see...I have until the 14th to decide.  It is only $5, so I should probably go ahead and sign up, but I really only want to do it if it is warm and sunny and the odds of that happening are really pretty slim.

What is this funk?

I haven't written in a while, because honestly...I don't have much to write.  I'm in some crazy deployment funk that has been creeping up on me for the last week or so.  I think I'm just getting tired.  Not physically tired, just emotionally and mentally tired.  Blah!

On a good note, my countdown starts with an 8 now...and it is only 2 digits.  Almost there....Thinking back to my 1/2 marathon that I ran, I remember getting a second wind towards the very end of the race.  I'm waiting for that to kick in.  I know it must be coming.  I started strong...and I will end strong, but this in between thing is not so cool.

So, what has been going on in my world?  Workouts are still going great!  Today, I have scrapbooked like a maniac, and tomorrow I am hanging out with Amy B. and working on cute stuff for her babies 1st birthday.  It is monkey themed and is going to be super cute...and I get to make a cute monkey cake!  And, that is about it...
