Letters to KG...6 Months!

How in the world are you already 6 months old!?  I know it is cliché, but time sure does fly by!  It seems like just yesterday Mommy was in the hospital having you!  This has been a really great month!  At the beginning of the month you started sitting up on your own.  You are so strong and can sit and play with all of your toys around you.  We have had a few really fun outings this month.  You took your first boat ride from Alexandria, VA to Washington D.C. to see the Nationals Baseball game.  It was really loud and you were really tired, but it was still a fun experience.  It might be a while before we try another baseball game.  The Cole’s came to town and you and Camden had so much fun together.  We went to visit Mt. Vernon again, shopped in Alexandria and did a little bit of sightseeing in D.C.  You are quite the little tourist and love riding around in your stroller.  We could not ask for a happier, more easygoing baby!  You have tried lots of new foods this month.  Bananas, prunes, avocado, broccoli and mangoes!  I think mangoes are probably your favorite.  You are eating one solid meal a day consistently and occasionally we have started giving you 2.  You never turn down food and you are so cute when you eat!  You still love your toes and you are babbling so much.  You are just starting to realize when Mommy and Daddy leave the room and you will sometimes cry for us to come back to get you.  You are reaching and grabbing for everything in sight.  If you can reach it, it goes directly in your mouth!  The Dr. said she can see some teeth on the bottom, but they haven’t broken through yet.  That is probably why you drool a lot and love to chew on anything.  You can sit in a high chair at restaurants and you love to look all around!  You have tried to use a sippy cup a couple of times and you really like it, but you haven’t quite mastered it.  You are really sleeping great at night.  You go to bed at 7PM and you are waking up at 6AM to eat and then going back to sleep for another hour or so.  Mommy and Daddy are loving it!  You went to your first Mayfest in Fort Worth and you also took a trip to Canton with the girls.  You and Mommy took a trip to TX for a few weeks to give Daddy time to write his thesis for school.  Daddy misses you so much, so we have been facetiming him when we get the chance and Mommy has sent him videos of you.  The cutest thing you do is belly laugh!  You love Dixie and you like Daisy and Tuffy too!  You love to reach for them and try to put their tails in your mouth.  You had your first baby illness this month, an eye infection!  We took you to the Dr. and they gave you some antibiotic eye drops.  It cleared up within 2 days and it never seemed to bother you.  You are still growing right on track.  You are 25 ½ inches long and 16 lbs, 15.6 oz.  That puts you in the 41% for height and 70% for weight.  You are wearing size 6-9 month clothes.  You wore size 2 diapers most of the month, but you just moved up to size 3.  You wear size 3 Huggies nighttime diapers also.  Happy ½ Birthday to our sweet, beautiful princess!  We love you more each day and can’t imagine what ours lives were like before you were born!  Each day is a blessing and a gift and we are loving watching you grow!

6 Month Check Up

I'll do an official 6 month post next week when she is actually 6 months old, but we had to go to the Dr. a few days early due to our upcoming trip.  

She was a perfect little angel and performed most of her tricks for the Dr.  She is 25 1/2 inches long (41%) and 16 lbs 15.6 oz (70%).  She is following her growth pattern just how she should.  Her head is 16 inches...I think.  (47%)  

This little girl has us all wrapped around her finger!  She makes us belly laugh daily and just melts our hearts.  Who knew you could love a little person so much!?  Time is going by way too fast and it needs to slow down a little.  Yesterday she was just a tiny newborn....

Nap Time Productivity- Cooking for the Man of the House

In a few days I'm headed to TX so Mark can make some headway on his thesis without interruption from his 2 favorite girls.  I'm sure that he would be just fine, but I wanted to make sure he had plenty of yummy meals made and ready to go.

I figured that beans are good for lots of different meal options, so I got a pot of my Dad's famous beans going in the crockpot.  This is my second attempt...hopefully it will go better than the first.  Who knew that beans expand exponentially and you shouldn't put 2 lbs of beans in a crockpot all at once?!  So this time there is only one lb. cooking!  Mark can use them for beans and rice, bean nachos, just a bowl of beans or whatever else he thinks of.

I pre-made 2 casseroles to put in the freezer that will be easy for him to pull out and bake when he is ready.

The first one is chicken spaghetti!  It is a recipe from one of my best girls, Shalane, and it is delicious.  I've adapted it just a bit, but it is a hearty casserole that reheats wonderfully.

2 cups shredded chicken
1 can cream of celery soup
1 can cream of chicken soup
1 small brick of velveeta
1 box spaghetti noodles(I use barilla plus thin spaghetti noodles)
2 heaping handfuls of cheddar cheese

-Heat soups, rotel and velveeta, until cheese is melted
-Stir in chicken and cooked noodles
-Pour in casserole dish
-Sprinkle cheddar cheese on the top
-Bake at 375 for 15 minutes

The second casserole is one of our favorite easy standby recipes!  King Ranch Chicken!
2 cups shredded Chicken
1 can cream of chicken soup
1 can rotel
12 corn tortillas
Cheddar cheese (a couple of handfuls)
-tear up about half of the tortillas and spread on the bottom of the casserole dish
-mix soup, rotel and chicken
-pour mixture on to tortillas and spread evenly
-top with the remaining tortillas
-sprinkle cheese on top
Bake at 400 for 35-45 minutes

Next up...Breakfast Casserole!  This is a new favorite around our house.  Typically, we would only make this when guests are in town, but it reheats really nicely so you can eat it several days in a row.  I did actually cook this one, because I wasn't sure how it would freeze before cooking.  
1 can crescent rolls
1 lb. sausage cooked and crumbled
5 eggs
1/4 cup milk
Cheddar Cheese

-Lightly grease casserole pan
-roll crescents out and press seams together
-spread sausage evenly 
-sprinkle cheese
-beat eggs, milk, oregano, s&p
-pour eggs evenly over the top
-bake at 375 for about 15-25 minutes...until eggs are set

Here we have 3 husband meals ready to go to the freezer!  This might be the most productive I have been during nap time in the past 5 1/2 months!  And thankfully Kenleigh slept for 1.5 hours!  :)
